Ingredients
- Biscuits: 2 cups (250 g) all-purpose flour, 1 tablespoon baking powder, 1/2 teaspoon baking soda, 1 teaspoon salt, 1 tablespoon granulated sugar, 1/2 cup (115 g) unsalted butter cold and cubed, 3/4 cup (180 ml) cold buttermilk
- Sausage Gravy: 1 pound (450 g) breakfast sausage pork mild or hot, 1/4 cup (30 g) all-purpose flour, 2 1/2 cups (600 ml) whole milk, 1/2 teaspoon freshly ground black pepper, 1/2 teaspoon salt adjust to taste, Optional pinch of crushed red pepper flakes
Instructions
- Preheat Oven:
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Mix Dry Ingredients:
- In a large bowl whisk together flour baking powder baking soda salt and sugar for the biscuits.
- Add Butter:
- Add cold cubed butter. Cut it into the flour mixture using a pastry blender or fork until it resembles coarse crumbs.
- Add Buttermilk:
- Pour in buttermilk and stir just until a shaggy dough forms. Do not overmix.
- Shape Biscuits:
- Turn the dough onto a floured surface. Gently pat to 1-inch (2.5 cm) thickness. Fold once or twice then cut out 6 biscuits using a 2.5-inch (6 cm) round cutter.
- Bake Biscuits:
- Place biscuits on prepared baking sheet slightly touching. Bake for 12 to 15 minutes until golden brown. Cool slightly on a rack.
- Cook Sausage:
- While biscuits bake prepare the gravy In a large skillet over medium heat cook sausage breaking it apart until browned and cooked through.
- Add Flour:
- Sprinkle flour over the cooked sausage. Stir and cook for 1 to 2 minutes to remove raw flour taste.
- Add Milk:
- Gradually add milk stirring constantly. Bring to a gentle simmer. Cook until thickened about 4 to 5 minutes. Season with salt black pepper and optional red pepper flakes.
- Serve:
- Split warm biscuits and ladle sausage gravy generously over each. Serve immediately.
