02 - 4 celery stalks, sliced
03 - 2 medium apples (Granny Smith or similar), cored and chopped
04 - 1 large onion, diced
05 - 2 medium carrots, sliced
06 - 2 cloves garlic, minced

07 - 2 tbsp olive oil
08 - 2 cups low-sodium chicken or vegetable broth
09 - 1 tbsp Dijon mustard
10 - 1 tbsp apple cider vinegar
11 - 1 tsp dried thyme
12 - 1/2 tsp salt, or to taste
13 - 1/4 tsp black pepper

# How to make it:
01 - Heat olive oil in a large skillet or Dutch oven over medium heat. Add sausage slices and cook 5–7 minutes, turning occasionally, until browned. Remove sausages with a slotted spoon and set aside.
02 - Add diced onion, sliced carrots, and celery to the same pan and sauté for 5 minutes until slightly softened.
03 - Stir in minced garlic and cook for 1 minute until fragrant.
04 - Add chopped apples and return sausage slices to the pan, mixing well.
05 - Pour in broth, then stir in Dijon mustard, apple cider vinegar, dried thyme, salt, and black pepper until fully combined.
06 - Bring mixture to a gentle simmer. Cover and cook for 20 minutes, stirring occasionally, until vegetables are tender and flavors meld.
07 - Taste and adjust salt and pepper if needed. Serve hot, garnished with chopped parsley if desired.
