Ingredients

  • Meats: 4 pork sausages (about 400 g), sliced into thick rounds
  • Vegetables: 1 large onion, finely chopped, 2 carrots, diced, 2 celery stalks, diced, 3 garlic cloves, minced, 1 red bell pepper, diced
  • Beans: 2 cans (400 g each) white beans (cannellini or Great Northern), drained and rinsed
  • Liquids: 1 can (400 g) diced tomatoes, 500 ml chicken or vegetable broth, 2 tbsp olive oil
  • Herbs & Spices: 1 tsp dried thyme, 1 tsp dried rosemary, 1 bay leaf, ½ tsp smoked paprika, Salt and black pepper, to taste
  • Garnish: 2 tbsp chopped fresh parsley

Instructions

Step 1:
Heat the olive oil in a large Dutch oven or heavy pot over medium heat. Add the sausage slices and cook until browned on all sides, about 5 minutes. Transfer to a plate and set aside.
Step 2:
In the same pot, add the onion, carrots, celery, and red bell pepper. Sauté for 5 to 7 minutes, until the vegetables are softened.
Step 3:
Add the garlic and cook for 1 minute until fragrant.
Step 4:
Return the sausage to the pot. Stir in the beans, diced tomatoes, broth, thyme, rosemary, bay leaf, and smoked paprika. Season with salt and black pepper.
Step 5:
Bring to a boil, then reduce heat to low. Cover and simmer for 30 minutes, stirring occasionally.
Step 6:
Discard the bay leaf. Adjust seasoning if needed.
Step 7:
Ladle stew into bowls and garnish with chopped parsley.
