Recipe Questions & Answers

How do I achieve tender shortbread texture?

Use cold butter and avoid overmixing once flour is added. Chilling the dough before baking helps maintain a tender, crumbly texture.

Can the pistachios be toasted beforehand?

Yes, toasting pistachios enhances their flavor and adds a slight crunch, enriching the overall taste.

What type of chocolate works best?

Dark chocolate chunks between 60–70% cocoa provide a rich contrast, but milk or white chocolate can be used for a milder sweetness.

How should I store these shortbreads?

Keep cookies in an airtight container at room temperature for up to a week or freeze the dough logs for longer storage.

Is it necessary to use an egg wash and coarse sugar?

Brushing the dough slices with egg wash and rolling them in coarse sugar creates a shiny, textured finish and adds subtle sweetness.

What you'll need

Dry Ingredients

01 2 cups all-purpose flour (250 g)
02 1/2 teaspoon fine sea salt

Wet Ingredients

01 1 cup unsalted butter, room temperature (226 g)
02 3/4 cup powdered sugar (90 g)
03 1 teaspoon pure vanilla extract

Add-ins

02 1/4 cup coarse sugar (50 g), e.g., turbinado or demerara
03 Flaky sea salt, for sprinkling

How to make it

Step 01

Combine dry ingredients: Whisk together the all-purpose flour and fine sea salt in a medium bowl. Set aside.

Step 02

Cream butter and sugar: In a large bowl or stand mixer, beat the unsalted butter and powdered sugar until smooth and creamy, approximately 2 minutes. Add vanilla extract and mix to combine.

Step 03

Incorporate flour mixture: Slowly add the flour and salt mixture to the butter mixture, mixing on low speed just until combined.

Step 04

Add pistachios and chocolate: Gently fold in the chopped roasted pistachios and dark chocolate chunks until evenly distributed throughout the dough.

Step 05

Shape dough logs: Divide the dough into two equal portions. Place each half on parchment paper and form into logs approximately 1.75 inches (4.5 cm) in diameter.

Step 06

Chill dough: Wrap each dough log tightly in parchment paper and refrigerate for at least 2 hours, or until firm.

Step 07

Prepare for baking: Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.

Step 08

Apply egg wash and sugar coating: Unwrap chilled dough logs. Brush each log evenly with the beaten egg, then roll in coarse sugar to coat the surface.

Step 09

Slice cookies: Using a sharp knife, cut the logs into 1/2-inch (1.25 cm) thick rounds. Arrange the cookies with 1 inch spacing on the prepared baking sheets.

Step 10

Season cookies: Sprinkle each cookie lightly with flaky sea salt.

Step 11

Bake: Bake cookies for 12 to 14 minutes, until edges just begin to turn golden brown.
