01 - 1 large cauliflower head, cut into florets
02 - 1 large cucumber
03 - 2 medium carrots, peeled
04 - 1 small red bell pepper
05 - 1 small yellow bell pepper
06 - 6 cherry tomatoes
07 - 1 black olive
→ Dip
08 - 7 ounces Greek yogurt or sour cream
09 - 2 tablespoons mayonnaise
10 - 1 tablespoon lemon juice
11 - 2 tablespoons fresh chives or dill, finely chopped
12 - 1 garlic clove, minced
13 - Salt and pepper, to taste
# How to make it:
01 - Slice the cucumber into 0.4-inch rounds. Cut one carrot into sticks for the arms and use a peeler to create thin ribbons from the other carrot for the scarf. Slice bell peppers into small strips and pieces for the hat, buttons, and scarf accents. Slice the black olive into thin rounds for the eyes and mouth.
02 - On a large serving platter, arrange three cauliflower florets vertically in increasing size to form the snowman’s body. Use cucumber rounds for the snowy base. Add carrot sticks for arms and carrot ribbons for the scarf around the neck. Place black olive slices for eyes and mouth, a small carrot piece for the nose, and bell pepper strips as the hat and buttons. Surround with cherry tomatoes and remaining vegetables.
03 - In a small mixing bowl, whisk together Greek yogurt, mayonnaise, lemon juice, chives or dill, and minced garlic. Season with salt and pepper according to taste.
04 - Place the dip in a small bowl beside or within the platter for dipping. Serve immediately to maintain crispness.
