# How to make it:
01 - Heat a large, deep skillet or Dutch oven over medium heat. Add a splash of oil, then sauté the chopped onion for 2 to 3 minutes until softened.
02 - Stir in the minced garlic and diced red bell pepper; cook for an additional 2 minutes until fragrant.
03 - Add the rinsed rice to the skillet and stir to coat with vegetables and oil; toast the rice for 1 to 2 minutes.
04 - Pour in the canned diced tomatoes with their juice, vegetable broth, corn, black beans, cumin, smoked paprika, chili powder, oregano, salt, and black pepper. Stir thoroughly to combine.
05 - Bring the mixture to a gentle boil, then reduce heat to low. Cover and simmer for 20 to 22 minutes, until rice is tender and most liquid is absorbed.
06 - Remove from heat and let rest covered for 5 minutes to allow flavors to meld.
