# How to make it:

- Preheat the oven to 350°F. Line a 9x9-inch baking pan with parchment paper.
- Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
- Beat butter, cream cheese, and sugar until light and fluffy. Add egg, Greek yogurt, and vanilla extract, mixing until smooth.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined.
- Spread batter evenly in the prepared pan and bake for 13 to 15 minutes until edges are lightly golden and a toothpick inserted comes out clean.
- Allow the cookie base to cool completely, then crumble into fine pieces in a large bowl.
- Add an additional 2 tablespoons of Greek yogurt to the crumbs, mixing until the mixture holds together when pressed. Add more yogurt 1 teaspoon at a time if needed.
- Roll mixture into 1-inch balls, place on a parchment-lined baking sheet, and freeze for 20 to 30 minutes until firm.
- Melt white chocolate or candy melts with coconut oil (if using) in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Dip each cake pop stick tip into melted chocolate, then insert into a cake ball.
- Dip each cake pop into melted chocolate, tapping off excess. Add sprinkles immediately if desired.
- Place cake pops upright in a styrofoam block or cake pop stand and allow coating to set at room temperature or in the refrigerator.
