Feta Fried Eggs Grilled Cheese (Printable)

Crispy feta-fried eggs and melted cheese meld between golden grilled sourdough slices.

# What you'll need:

→ Dairy & Cheese

01 - 4 oz crumbled feta cheese
02 - 4 slices cheddar or mozzarella cheese
03 - 2 tbsp unsalted butter, room temperature

→ Bread

04 - 4 slices sourdough or country-style bread

→ Eggs

05 - 2 large eggs

→ Pantry

06 - 1 tbsp olive oil
07 - Freshly ground black pepper, to taste
08 - Pinch of red pepper flakes (optional)

# How to make it:

01 - Heat a nonstick skillet over medium heat and add olive oil. Sprinkle half of the crumbled feta into two circles roughly the size of the bread slices directly on the skillet surface.
02 - Crack one egg into the center of each feta circle. Season with black pepper and red pepper flakes if desired. Cook for 2 to 3 minutes until the feta edges are golden and crispy and egg whites are set. Flip carefully and cook for 1 minute more for soft yolks or longer for firmer yolks. Remove eggs and set aside.
03 - Butter one side of each bread slice. Place two slices buttered side down on a clean surface. Layer each with two slices of cheddar or mozzarella cheese, then top with a feta-fried egg. Cover with the remaining bread slices, buttered side up.
04 - Clean the skillet, return it to medium heat, and grill the sandwiches for 2 to 3 minutes per side, pressing gently, until the bread is golden and the cheese is melted.
05 - Slice the sandwiches and serve immediately.

# Expert suggestions:

01 -
  • The feta creates a crispy, salty frame around the egg that traditional grilled cheese never had.
  • It comes together in under 20 minutes but tastes like you spent way more effort than you actually did.
  • That moment when the cheese hits the hot skillet and starts to brown is pure kitchen magic.
02 -
  • Don't skip the feta-crisping step; those golden, lacy edges are what separate this from just a regular egg sandwich.
  • Medium heat is non-negotiable here—go too hot and the outside of your bread will burn while the cheese inside is still cold.
03 -
  • The feta will continue to crisp for a few seconds after you crack the egg on top, so resist the urge to flip too early.
  • Press the sandwich gently as it grills—enough to encourage melting, not so much that you squeeze out all the filling.
