  • Vegetables & Aromatics: 1 medium yellow onion, finely chopped, 3 garlic cloves, minced
  • Sauce: 800 g (28 oz) canned crushed tomatoes, 400 g (14 oz) canned tomato sauce, 2 tbsp tomato paste, 1 tsp dried basil, 1 tsp dried oregano, 1/2 tsp dried thyme, 1/2 tsp red pepper flakes (optional), 1 tsp sugar, Salt and freshly ground black pepper, to taste
  • Cheese: 250 g (2 cups) shredded mozzarella cheese, 125 g (1 cup) grated Parmesan cheese, 425 g (15 oz) ricotta cheese
  • Others: 2 tbsp olive oil, Fresh basil leaves for garnish (optional)

Instructions

Step 1:
Preheat the oven to 190°C (375°F). Lightly grease a 23x33 cm (9x13 inch) baking dish.
Step 2:
Cook the ziti pasta in a large pot of salted boiling water until just al dente, about 8 minutes. Drain and set aside.
Step 3:
In a large skillet over medium heat, heat olive oil. Add the Italian sausage, breaking it up with a spoon, and cook until browned, about 5 minutes. Remove excess fat if necessary.
Step 4:
Add the chopped onion and cook until translucent, about 3 minutes. Add garlic and cook for another 1 minute.
Step 5:
Stir in crushed tomatoes, tomato sauce, tomato paste, basil, oregano, thyme, red pepper flakes (if using), sugar, salt, and pepper. Simmer the sauce for 10 minutes, stirring occasionally.
Step 6:
In a large bowl, combine the cooked pasta, most of the sauce (reserve about 1 cup), half of the mozzarella, half of the Parmesan, and the ricotta cheese. Mix gently until evenly combined.
Step 7:
Spread half of the pasta mixture in the prepared baking dish. Top with half of the reserved sauce and half of the remaining mozzarella and Parmesan. Repeat with the remaining pasta, sauce, mozzarella, and Parmesan.
Step 8:
Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 15 minutes, until the cheese is bubbly and golden brown.
Step 9:
Let rest for 10 minutes before serving. Garnish with fresh basil leaves if desired.
